La Sablesienne Shortbread
The recipe for Sablé, a pure butter biscuit, has been passed down from generation to generation in the city which it bears the name, Sablé-sur-Sarthe in France. In July 1670 Madeleine de Souvré, better known as Marquise de Sablé, offered small round cookies that the famous butler to the King’s brother, Vatel, who tasted and liked their lightness. He ordered them to be served every day. Voila, the Little Shortbread Cookie was born.
La Sablésienne uses ingredients mainly from the West of France such as flour from a Sarthois miller, eggs from chickens raised in the open air and fresh butter. The recipes do not contain any additives, dyes, preservatives, or GMOs. At La Sablésienne, cookies are still baked on metal plates and picked up by hand. La Sablésienne, more than 50 years old, holds more than thirty recipes to produce high quality cookies perpetuating the art of French pastry.
