Bienvenue Automne
When asked what my favorite time of year is, I always respond “Autumn.” Most people expect me to say either spring or the holidays. In truth it’s fall. It’s the time when we transition from what seems like a long and hot summer, to cooler nights, yet we still have sunny warm days. The weather is mild. Things slow down, for me anyway. Sadly, it’s over way too fast.
While I am pulling out my fall decorations for the house, I like to brew tea and savor the opportunity to enjoy the slower pace before I am launched into holiday mode. I found these fabulous teas from Tea Heritage in Lyon. They are rich in quality ingredients and their fragrance is divine. They have more to choose from, but I picked these three for our website so I could share them with you. I hope you like them as well because I plan on ordering more blends from them.
Tea Heritage Cinnamon Roll Rooibos
Reminiscent of fresh baked cinnamon rolls with flavors of cinnamon, almonds, apples and gingerbread. Only the best ingredients are used. Super Grade Rooibos, Apple Chunks, Cinnamon Chunks, Ginger pieces, Gingerbread man made with a little sugar, Blackberry leaves, Rosehip leaves, Cinnamon stick, Whole star anise, and Roasted buckwheat. Herbal. Caffeine free. 100g pouch
This yummy beverage is rich and satisfying. You can enjoy in the evening with no worry because it’s caffeine free. If you use skim milk, you have a guilt-free, after dinner treat.
Caffeine-free Pumpkin Cinnamon Roll Lat-tea
Ingredients
3 tsp Cinnamon Roll Rooibos (You can substitute Praline black tea, not caffeine free, see notes)
8 oz almost boiling water for brewing
½ tsp pumpkin simple syrup (You can use sugar-free syrup)
3 oz of skim or whole milk (See notes)
Cinnamon for garnish
Directions
Brew Cinnamon Roll Rooibos blend in 8 oz of near boiling water. Steep a full 8 minutes. (Brew the Praline black tea, not caffeine free, for a full 5 minutes) Strain into a large mug.
Stir in pumpkin syrup.
Heat milk do not boil, (between 140- and 155-degrees Fahrenheit) before frothing, then froth with whisk or electric beater or frother.
If you own a milk steamer/frother, even better. You can skip the heating/frothing step.
Pour milk and foam into the mug with the tea.
Sprinkle foam with cinnamon.
Enjoy!
Notes: Because of the different proteins, whole milk results in a thicker, creamier foam, while skimmed milk results in more foam and larger air bubbles. I also tried almond milk. It produced a nice foam as well.
I tried substituting the Praline black tea for the Cinnamon Roll rooibos. It was rich and dark, very flavorful, but not caffeine free, so enjoy early in the day. I brewed this tea for a full five minutes. So, you can have Pumpkin Praline Lat-tea as well.
Praline Black Tea
If you like pralines, you will love this flavorful tea. They use crushed almond pralines in the blend. Black Tea from Assam, Crushed Pink Almond Pralines, Chicory root, Almond Extract, and Stevia. 100g pouch

I used the Imperial Tea Maker from Vahdam to brew my teas. It makes the brewing process so simple.
